Sue (check out the other recipes she’s shared, below) sent this great recipe idea for Emma to try. The possibilities for both kids and adults (see photos directly above) are endless, and I am especially taken by the idea of breakfast pizzas (bottom row right), perhaps on a brioche dough–yum! Sue’s recipe calls for sugar cookie mix, the kind in a box. Her kids are adults now, and she says she hasn’t made this since pre-made dough became available. I gave the girls a choice of several. They’re so many (I’ve never been to the pre-made dough aisle)!!! I would have gone for one that had chocolate chips and peanut-butter cups (could that be bad in any form?), but Emma and her friend, Abby, chose a “simple” chocolate-chip-cookie crust. Big success! Next time, Emma wants to try a brownie crust. Consider, too, roll-dough or puff pastry. You can make individual pizzas, like tarts, or any shape you please (hearts for Valentine’s Day; stars or trees for the holidays). Likewise, the colors of the fruit can align with, say, the fourth of July ((blueberries, strawberries and bananas) or Halloween (oranges and dark grapes). Let your mind fly! It’s a hit among kids up to 80!
1 box sugar cookie mix, or any pre-made dough
10 oz. cream cheese
1/3 cup sugar
1/2 t. vanilla
Sliced fruit such as strawberries, bananas, blueberries, peaches, pears, raspberries…almost anything that won’t “weep” too much
Lemon juice
Push or roll dough into pizza pan, or onto cookie sheet, to a thickness of about 1/8 inch. Bake according to (package) directions.
Blend cream cheese with sugar and vanilla, and spread over crust. Cover with fruit as you please. If you’re not serving immediately, squeeze a tiny bit of lemon juice over the fruit to preserve its color.
