

The first night my dad was here Bruce grilled steaks and I made Oven-Roasted Crispy Potatoes. I knew Bruce was dying to have a steak sandwich the next day when my dad and I went to the beach for lunch, so I asked him to wait for dinner and promised I’d make some really great ones. I got some ciabatta, Roquefort, baby arugula, and tomatoes…mixed a bit of Dijon into some mayo…and put ‘em all together. Even Emma, who says she doesn’t eat steak because of Mad Cow (?!?!?), had one.
A few bites into the first half sandwich, Bruce began wondering aloud, loudly, how it would be in the panini maker—actually, the ciabatta wasn’t the best, and he thought a light grill might help. We all offered up our second halves and the result was divine. The ciabatta was crispy on the outside, still slightly soft in the middle, and the Roquefort became melty, like a lovely sauce mingling with the steak as well as the arugula and tomatoes. When we make these sandwiches again, we’ll definitely grill them, at least lightly–you could also pop them in the oven for a few minutes, I bet.

Christelle…This ciabatta from TJs looks better than it is (hence Bruce’s suggestion that we pull out the panini maker). I recommend La Brea ciabatta instead….

Aly, this ciabatta came from TJs. Though I shop there regularly and swear by their products, the bread looked better than it really was. I recommend you try to find LaBrea ciabatta, which is always fantastic. Thanks for stopping by, Catherine
