Avoid freezer burn by using foil rather than plastic wrap, which is porous and lets in moisture. Just be sure to seal the seams.

Our new favorite restaurant in Los Angeles is the Oysterette on Ocean Avenue in Santa Monica—the best crudo, the best fish and chips (where the fish is the star, not a heavy fried crust), the best Po’ Boy (the biggest, juiciest oysters that are light as tempura)…I could go on and on--just try it, you’ll love it!
