I love smoked salmon any which way: on a toasted bagel with cream cheese; wrapped around roasted asparagus; scrambled with some eggs and onions (preferably from Barney Greengrass in NYC; the LA Barney Greengrass is just…too…LA); on its own with a little squeeze of lemon and some capers; in a Smoked Salmon Cobb Salad. It just doesn’t matter…
I have never thought of Smoked Salmon Hash. Not once. It just came to me out of the blue. I don’t even like hash. When I was growing up in NYC, my mom used to love corned beef hash and she’d make it for dinner on occasion. I thought it was “gross” and I was at that I’m- never-eating-that-again impressionable age. And, I didn’t.
But the other night, I didn’t have time to make dinner and I thought I’d just scramble some eggs and toss in some smoked salmon. I had some potatoes, and I decided I’d use them, too. So here’s what I did to end up with Smoked Salmon Hash:
1. Cube potatoes and brown with some diced shallots.
2. Add bite-size pieces of smoked salmon and some chopped dill. Mix to combine, and warm the salmon.
3. With a spoon, make indentations in the mixture to the bottom of the skillet and break eggs into each one.
4. Cover and cook until whites are just hard.
5. Plate, one egg for each serving…and garnish with sour cream and a bit more dill.
We all thought this was a keeper….
I want to thank journeyofanitaliancook for passing along the Kreative Blogger award—it means a lot to me because she called out our Cooking School for kids and all the other projects my daughter Emma and I do together in the kitchen. As a grateful recipient I am supposed to list seven things about myself…which I won’t do here because I did it here, when I won the Honest Scrap Award (and, frankly, there just aren’t that many interesting random things about me). In addition, I am to give out the Kreative Blogger award to seven great (and loyal!) bloggers, which I willingly and gladly do (please post the award, link back to me, then send it on to seven more people and list seven things about yourself): Congratulations, and thank you for all your support…fivestarfoodie, lickedspoon, bigredkitchen, sophiesfoodiefiles, familyfriendlyfood, asoutherngrace, and elrasbaking.
