


I love smoked salmon any which way: on a toasted bagel with cream cheese; wrapped around roasted asparagus; scrambled with some eggs and onions (preferably from Barney Greengrass in NYC; the LA Barney Greengrass is just…too…LA); on its own with a little squeeze of lemon and some capers; in a Smoked Salmon Cobb Salad. It just doesn’t matter…
I have never thought of Smoked Salmon Hash. Not once. It just came to me out of the blue. I don’t even like hash. When I was growing up in NYC, my mom used to love corned beef hash and she’d make it for dinner on occasion. I thought it was “gross” and I was at that I’m- never-eating-that-again impressionable age. And, I didn’t.
But the other night, I didn’t have time to make dinner and I thought I’d just scramble some eggs and toss in some smoked salmon. I had some potatoes, and I decided I’d use them, too. So here’s what I did to end up with Smoked Salmon Hash:
1. Cube potatoes and brown with some diced shallots.
2. Add bite-size pieces of smoked salmon and some chopped dill. Mix to combine, and warm the salmon.
3. With a spoon, make indentations in the mixture to the bottom of the skillet and break eggs into each one.
4. Cover and cook until whites are just hard.
5. Plate, one egg for each serving…and garnish with sour cream and a bit more dill.
We all thought this was a keeper….

What a great idea! We always end up with a large quantity of smoked salmon since I can only find it when out of town. This is a great way to enjoy it. Congratulations on the award!

I don’t think I’ve ever had hash. We rarely ate potatoes in my house. But if they had some delicious smoked salmon and eggs like this dish, I’d gobble it up for sure!
