Salads

I make a lot of salads, and thankfully even Emma eats them now…so, please, share your favorite recipes for salads, I always need more! They’re a great first course for a dinner party, a perfect choice for a girls’ lunch and an ideal weeknight dinner (all year ’round in sunny southern California, where, frankly, living up to the day/weather can get wearing by dinnertime).

  1. I don’t consider myself a cook extraordinaire but I was having a dinner party one evening, and I served a salad with olive oil, mustard and some fancy salt.

    One of my guest dropped her fork in a forceful manner and said “I pride myself on my salad dressing and this is better than mine!” (I had no idea that she was so competitive.) Anyway she wanted to know EXACTLY how I made it which took no more than 5 minutes (may be less).

    The key to this recipe is CLEAN HANDS.

    Plus a couple of tablespoons of Olive Oil – (no brand in particular)

    A Dollop of Mustard — only French and spicy the better (avoid the mustard with seeds)

    Sprinkle some sea salt or some other fancy salt – no Kosher or regular salt.

    Put all ingredients on the bottom of the bowl and mash it up a bit with the back of a spoon so it becomes a somewhat pasty.

    Continue with the back of the spoon spread it around the entire bowl.

    This is where the clean hands come in — put the salad in the bowl and take the salad in your hand like a sponge and soak up the dressing on the bottom and sides of bowl.

    And finally take your salad servers and mix. It is a bit messy but it works.

    I think this is the first recipe on your blog in which clean hands is the most important ingredient!

    ADVICE: Make sure your guest don’t see the process — it may freak some of them out – ha ha ha.
