I’m not big on hors d’oeuvres before a dinner party—if I leave them on the coffee table, the dog is too tempted and we have to lock him away, plus it’s an extra set of dishes to wash and napkins to iron…and people tend to eat too many so my meal becomes tomorrow’s leftovers. Having said that, I love a good first course. It seems a very organized way to drag out the dinner (which, hopefully, is a good thing) and allows me to perfectly time entree (usually 20 minutes after we sit down).
